Chicken Mediterranean

Ingredients:
- 3-4 Boneless chicken breasts
- 1/2 cup reduced sodium chicken broth
- 1 1/2 - 2 cups tomato sauce
- 1 clove garlic, minced
- 1 small onion, coarsely chopped
- 1 green pepper, seeded & chopped
- 1 8oz. can sliced mushrooms, drained
- 16 oz. stewed tomatoes
- 2 stalks celery, chopped
- 1 Tablespoon basil
- 1 cup dry white cooking wine (optional - if not used, increase chicken broth)
- Poach chicken in 1/2 cup chicken broth.
- Cut chicken into bite size pieces.
- Combine all ingredients in a large dutch oven pot and cook over medium heat for 20 minutes.
- Serve over rice.
